With this wine we want to transmit the essence of the typicity of the land.The elaboration in the winery is done carefully to respect the vineyard, formed by 5 old vines between 80 and 90 years old. Its soils are sandy and of fine gravel, located at 940 meters altitude in San Juan del Monte, eastern part of the Ribera del Duero (Burgos-Soria).
GENERAL INFORMATION
Oenologist: Aurelio García.
Production: Limited according vintage. Numbered bottles between 5.000 and 6.000 of 750 ml and 50 bottles of 1.500 ml.
Tasting notes: Colour: Deep cherry red with violet hues. On the nose: Ripe fruit with intense balsamic aromas. Long lingering and complex. On the plate: Ripe black fruit with herbal tones, long and powerful reflecting the soil typicity.
TECHNICAL INFORMATION
Grape Variety: 100% Tempranillo (Tinta del País).
Vineyards: from our vineyard from San Juan del Monte at 940m altitude.
Soil: sandy, shallow and fine gravel.
Yield: 800- 1.500 kg /ha, bunches are hand picking in 15 kg cases. They stay one night in cold at 8ºC and then the bunches and grapes are selected in a double table.
Maceration: between 15 and 20 days, of which 7 days is kept in cold at 8ºC.
Alcoholic Fermentation: for 5 days at 24 ºC.
Malolactic Fermentation: In brand new French Oak.
Ageing: completing until 16 months in brand new French oak barrels. Barrels of 300 litres medium toasted.
Analysis:
Alcohol content: 15% Vol.
Acidity: 5,19 g/l.
Sugar content : < 2 g/l.
pH : 3,68.
Filtration: Light
