They are in an exposed and ventilated area which allows a natural viticulture.<\/p>\n<p style=\"font-weight: 300;\">The wine is made with all the grapes that the vineyard has. It is mostly Tinta del pa\u00eds and a 5% of white grape varieties, mainly Albillo.<\/p>\n<p style=\"font-weight: 300;\">Colour: Deep cherry red.<\/p>\n<p style=\"font-weight: 300;\">On the nose: Ripe black fruit with liquorice tones, pipe tobacco, truffle and herbal touch.<\/p>\n<p style=\"font-weight: 300;\">On the plate: intense, powerful. Complex and serious as it opens shows\u2026..<\/p>\n<p style=\"font-weight: 300;\"><strong>GENERAL INFORMATION<\/strong><\/p>\n<p style=\"font-weight: 300;\"><strong>Oenologist:\u00a0<\/strong>Aurelio Garc\u00eda.<\/p>\n<p style=\"font-weight: 300;\"><strong>Production:\u00a0<\/strong>Limited according vintage. Numbered bottles between 2.000 and 3.000 of 750 ml and 50 bottles of 1.500 ml.<\/p>\n<p style=\"font-weight: 300;\"><strong>TECHNICAL INFORMATION<\/strong><\/p>\n<p style=\"font-weight: 300;\"><strong>Grape Variety:\u00a0<\/strong>100% Tempranillo (Tinta del Pa\u00eds).<\/p>\n<p style=\"font-weight: 300;\"><strong>Vineyards:\u00a0<\/strong>set of 3 vineyards with more than 100 years old located in Pe\u00f1aranda de Duero (Burgos),\u00a0at 900m altitude.<\/p>\n<p style=\"font-weight: 300;\"><strong>Soil:\u00a0<\/strong>poor soil, sand mixed with clay and calcareous subsoil.<\/p>\n<p style=\"font-weight: 300;\"><strong>Yield:\u00a0<\/strong>800- 1000 kg \/ha, bunches are hand picking in 15 kg cases. They stay one night in cold at 8\u00baC and then the bunches and grapes are selected in a double table.<\/p>\n<p style=\"font-weight: 300;\"><strong>Maceration:\u00a0<\/strong>between 15 and 20 days, of which 7 days is kept in\u00a0cold at 8\u00baC.<\/p>\n<p style=\"font-weight: 300;\"><strong>Alcoholic Fermentation:\u00a0<\/strong>for 5 days at 24 \u00baC.<\/p>\n<p style=\"font-weight: 300;\"><strong>Malolactic Fermentation:\u00a0<\/strong>In brand new French Oak barrels.<\/p>\n<p style=\"font-weight: 300;\"><strong>Ageing:\u00a0<\/strong>completing until 18 months in brand new French oak barrels.
